Garden Pasta Salad
Ahhhh, late summer - the breeze is warm, garden's are (hopefully) flourishing, and you if you're like me, you find yourself with 5,000 cucumbers that need to be eaten - now!
Maybe you don't have cucumbers - maybe you have and abundance of tomatoes, or zucchini - that's what I love about this recipe - just throw in what you've got and it will be delicious!
It's also super simple and super refreshing.
Here's what you need:
Noodles - cooked (I like quinoa noodles but use whatever noodle tickles your fancy)
Veggies - Here's where it gets fun - this recipe is so versatile, you can use whatever veggies you like! I like to use tomatoes, peppers, cucumbers and sometimes I even throw a little zucchini in!
Cheese - (optional). If you are a cheese eater, some small chunks of provolone are a nice addition, but it's equally delicious without it.
Italian dressing - I HIGHLY recommend making your own dressing from scratch. Most store bought dressings are filled with not-so-nutritious ingredients. Kathryn at familyfoodonthetable.com has a fabulous recipe you can follow here. that is not only delicious, but very quick and easy to make.
Put all the ingredients in a large bowl, toss and eat! I like it best after it's been chilled in the refrigerator but sometimes I can't wait! What are your favorite summer veggies?
