Gluten-Dairy-Peanut Free Energy Balls
As a busy mom with three even busier kiddos, I often opt for packaged after school snacks. Granola bars are a fav of my bunch and we eat them a lot (probably more often than we should...). However, when I have 15 extra minutes (that's really all it takes!!) I whip up a batch of these babies.
The only problem? They don't last more than 24 hours...People are snitching them all the time! (I'm looking at you, 4 year-old with a stool...).
They're soooo tasty - I have to hide them in the fridge behind the sauerkraut. (Nobody looks behind the sauerkraut).
What's even better, is they are very versatile. Out of chocolate chips? Use dried fruit. Don't like almond butter? Use your favorite nut butter. Not a coconut fan? Leave it out.

Gluten-Dairy-Peanut Free Energy Balls
Ingredients:
1 C dry gluten free oatmeal (we use Bob's Red Mill)
2/3 C toasted coconut flakes
1/2 C almond butter (we use Barney Butter)
1/2 C ground flax seeds
1/2 C chocolate chips (we use Enjoy Life)
1/3 C honey or maple syrup
1 TBSP chia seeds
1 tsp vanilla extract
Mix all ingredients together in one bowl. Shape into balls or press into an 8x8 inch pan. Keep in the refrigerator up to one week.
